A recipe from old Wrocław

Not only did I buy some fine beetroot relish from Maciak on the visit noticed at reference 1, they also gave me a recipe which they said came from old Wrocław, a very old town once known as Breslau, and which we were able to try out today.

Boil two ounces of white long grain rice for around 10 minutes in plenty of water, after which it should be cooked but still have a bit of bite. Strain and set aside to cool.

Take tin of tuna fish - it does not need to be a fancy brand - and mash it up thoroughly with a good dollop of salad cream - that is to say the thick yellow stuff which used to be sold by Heinz. Ours came from the Co-op. (During the Soviet era it was often hard to get tuna and it was common to substitute herring or eel. We might try that on a future occasion).

Add three level tablespoons of beetroot relish (illustrated) and stir that in. Add the whole lot to the rice and mix well together, but without smashing up the rice.

Out of which you have four portions which can be served in ramekins or some such as a starter before hot red meat.

PS: on a subsequent journey through Earlsfield, I found that I had misdirected myself as to the subject of the picture noticed at reference 1. Not BT at all, rather Sky Sports. I have also noticed that there are a number of Sky advertisements dotted about which use elements from this one.
