For the first time in a while, we took four kippers from our local Waitrose this week, described as coming from Craster, a place up north from where we have bought kippers in person in the past.
Taken over two consecutive breakfasts, simmered in the frying pan rather than in the fish kettle, on the grounds that getting this last down and washing it up afterwards was too much bother. Kippers were fine, but firmer and darker than I remember - which may be the result of their having had less water to soak the colouring away. Perhaps kettle next time to see.
I am pleased to be able to report that kippers remain a cheap dish at around £5 for the four of them, including their heads and tails, as they should. Also including their complicated wrapping in some kind of foil, a wrapping which included use of a complicated machine which looked rather like one of those in which your sandwiches are toasted in public houses in Scotland.
